line & lee oatmeal chocolate chip peanut butter bars

makes ~16-18 bars

1/2 cup butter - softened
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg, beaten
1 tsp vanilla extract
1/2 cup flour
1 cup quick-cooking oats
1 tsp baking soda
1/4 tsp salt
1 cup semisweet chocolate chips

preheat oven to 350 F. in a medium bowl combine the flour, oats, baking soda and salt-set aside. then in the bowl of an electric mixer, cream together the butter, sugars and peanut butter with the paddle attachment. add the egg and vanilla; mix until combined. stir the flour mixture into the butter mixture. spread the dough into a 9x9-inch parchment-lined baking dish. sprinkle with chocolate chips (push in). bake at 350° for ~25 minutes or until lightly browned. allow to cool for 10 minutes-then cut. once completely cooled, store in a ziplock bag or cookie tin for up to 3 days.
