kale & sweet potato salad
serves 6-8 (side)

4 sweet potatoes - peeled and diced
2 tsp olive oil
1 tsp cinnamon
kosher salt & fresh ground pepper
2 TBS olive oil
1 1/2 tsp white wine vinegar
1 tsp dijon mustard
1 tsp honey
1/2 lemon - juiced
kosher salt and fresh ground pepper
4 cups curley kale - washed and chopped
walnuts - rough chop
goat or feta cheese
dried cranberries
preheat oven to 400 F. place the sweet potatoes on a lined cookie sheet and toss with olive oil, cinnamon, salt, and pepper. bake for 25 mins (turning once halfway through).
meanwhile, in a small jam jar or tupperware shake up the olive oil, white wine vinegar, mustard, honey, lemon, salt, and pepper for the vinaigrette. toss with the kale (some people will massage to make the kale more tender).
plate the salad and garnish with sweet potatoes, walnuts, cheese, and dried cranberries.
