Chocolate Pie
Recipe Note: EASY
A recipe from our mother-in-law, PAt, serves 6-8
1 1/4 cup graham cracker crumbs
3 TBS sugar
1/3 cup butter - melted

3 TBS cocoa powder - we used ghirardelli or trader joe’s
4 TBS flour
1 cup sugar
2 eggs - lightly beaten
1 tsp vanilla
1/2 cup butter - melted
powdered sugar
for the crust: preheat oven to 350 F. combine the crumbs and sugar in a mixing bow. stir in the melted butter and combine with hands. press the crust into a 9-inch pie pan. make sure the crust covers the pan and the sides. bake for 8 minutes and allow to cool.
lower heat of oven to 325 F. combine the cocoa powder (measured and then sifted), flour, & sugar. then add the eggs, and vanilla (with a whisk). slowly (while whisking) add the melted butter; mix well to combine. pour into pie crust. bake for 35-45 minutes; or until a toothpick comes out clean. cool for 15 minutes. dust with powdered sugar (using a sieve). enjoy!
