line & lee chicken tenders

1 1/2 pounds chicken tenders
1 cup flour
1 tsp kosher salt
1/2 tsp fresh ground black pepper
2 eggs
1 cup dry bread crumbs
1/2 cup grated parmesan cheese
butter
olive oil
preheat oven to 350 F. pound the chicken tenders until they are 1/4 inch thick. combine the flour, salt, and pepper on a shallow bowl/plate. on a second bowl/plate, beat the eggs. on a third bowl/plate, mix the bread crumbs and the parmesan cheese. have one empty dinner plate on hand. take the chicken through the three-step breading: first the flour, then the egg, and finally the bread crumb mixture. once finished with each tender, place on the empty plate.
heat about one tablespoon of butter and one tablespoon of olive oil in a large sauté pan and cook the chicken on medium for (approx) 3 minutes on each side, or until golden. once golden on both side, place the chicken on a cookie sheet and set aside. add more butter and oil and cook the rest of the chicken. add to the cookie sheet and place in oven for 5 minutes or until cooked through. serve with your favorite BBQ sauce.
