Avocado salad
serves 4-6 as a side
recipe note: easy

1 bag (or box) of spinach
3 avocados - sliced and salted
half of a red onion - thinly sliced
goat cheese - for crumbling

2 TBS red wine vinegar
4 TBS olive oil
1/2 tsp dijon mustard
1/2 tsp honey
kosher salt & fresh ground pepper - to taste

place the goat cheese in the freezer while you are making the salad and dressing (this will make it easy to crumble on the salad). to make the dressing, place all of the ingredients in an old jam jar with a lid or a small tupperware container—shake until emulsified. place the spinach in a large salad bowl and toss with a light amount of dressing. top with the avocados and red onion. using a fork, crumble the goat cheese all over the salad. serve immediately.
